Swap Rollup for Rolldown (rolldown-vite) in the production build

The last JS-based stage of the toolchain (dev was already SWC+esbuild).
Local build: 18.75s/1.83GB peak RSS -> 1.97s/1.27GB, output verified
identical in the browser.
